Wine acquires most of its tannins and aromatic properties through contact with wood ... exclusively French oak. The casks used for the vinification process are manufactured using staves, planks of wood that are obtained from the very heart of the French oak.
Jammot specialises in the manufacture of those staves.
The raw material is seasoned in the open air at our Lonzac site for 18 months. We select timber from its original source, which is delivered in logs. For over 10 years, we have been splitting and processing timber into staves, and more recently into shavings or aggregates.
Since January 2005, new winemaking methods, involving the maceration of oak in the wine, require the production of wood especially for winemaking that is adapted to the different uses and properties sought in wine production.
